Choc Berry Banana Crêpes. Raw Vegan

This crêpe recipe is easily the most delicious and easiest raw dessert I have EVER created. I totally winged this recipe the other night and it turned out perfectly! It is so simple, and can easily be made completely fat-free too. I absolutely love the flavour and texture combination of this crêpe recipe- the slight crispiness of the crêpe, combined with the soft & sweet banana, cashew creme, mixed berry and chocolate sauce filling... is just delightful. I have such beautiful memories of enjoying crêpes after school with my sister and grandma as a kid, so this raw recipe holds a special place in my heart.

Ingredients

These quantities will make 2 large crepes OR 3 medium sized crepes

For the crêpe

○ 1.5 - 2 extra ripe bananas, you'll want to get your hands on the spottiest bananas possible

○ 1 tbsp of psyllium husk

○ 1/4 -1/2 cup water

For the filling

○ 1 mashed banana

○ 1 cup of mixed berries (strawberries, blueberries, raspberries, blackberries)

○ 1 tbsp cashew butter mixed with 1 tbsp maple syrup (optional- don't include if you'd like this dessert to be fat-free)

○ cacao-sweet sauce

For the cacao-sweet sauce

○ 2-3 tbsp raw cacao powder

○ 3 tbsp raw coconut nectar / or maple syrup

Method

1. Blend crêpe ingredients together until smooth in a food processor, adding more water if needed.

2. Evenly spread out crêpe mixture on a teflex sheet upon a dehydrator tray, in a large circle. Should be 5-10mm thick.

3. Dehydrate at 50 degrees Celcius for 3-5 hours, or until pliable and can be peeled off the teflex sheet.

4. Mix the cacao and sweetener (coconut nectar or maple) together to create the chocolate sauce.

5. On one edge of the crêpe, mash one banana with a fork, top with mixed berries (strawberries, blueberries, raspberries, blackberries), add the cashew butter & maple 'cream' mix, and the chocolate sauce!

6. Roll up the crêpe like a sushi roll, applying a gentle pressure (don't squeeze the crêpe or it may tear open).

7. Serve on a pretty plate, and drizzle additional chocolate sauce on top. Feel free to decorate your crêpe with berries, thinly sliced banana and a sprinkle of raw cacao powder.
