Mango Chilli Lime Dressing Recipe

Now that it’s October here in Australia and we’re moving into warmer weather, mangos are on their way back! This recipe has been a ride-or-die favourite of mine for a few years now, and I couldn’t be happier that it’s that time of year where I can enjoy it once again this spring and summer :)

Simple yet packed with spice and summer flavours, this mango chilli lime dressing can be made in minutes. With undertones of coriander, cumin, paprika, the perfect amount of fruity sweetness, and a zing from the lime — this dressing is refreshing to pair with endless dishes. You can even turn it into a sauce or dip by using less lime juice! I love to add it to vibrant salads, tacos, rice paper rolls, baked sweet potato chips, and even nori rolls. This mango chilli lime dressing is raw, wholefood plant-based, oil free, soy free, and of course, gluten free.

Ingredients

You will need

  • 1 ripe mango (look for one that has mostly orange, red, or yellow skin, without green patches! If the colour is right and if the scent is strong and sweet, you know you’ve got a ripe mango. It should also be a little soft to touch).

  • Juice of 1 lime

  • 1/4 tsp red chilli

  • 1/2 clove minced garlic

  • 1 tbsp fresh coriander

  • 1/4 tsp cumin powder

  • 1/4 tsp paprika podwer

  • 1/2 tsp Celtic salt or less according to your liking

 

Method

  1. First, slice off 2 cheeks of your mango from either side of the stone. In each cheek, cut the flesh into a grid-like pattern without going through the mango skin. Using a large spoon, detach the flesh from the skin and scoop the cubes out.

  2. Add the mango flesh and all other ingredients to a blender or use a bamix stick hand-held blender (I find these are easier to use for making dressings or sauces). Then blend on a medium to high speed setting until you have a creamy, golden dressing!
