Go-To Guacamole 🥑

I’m not one for hyperbole, but this truly is the best guacamole recipe on the planet. When it comes to crowd-pleasing guacamole the key is to not get too fancy. Guacamole is meant to be easy to make and delicious. Plain and simple. It’s a blend of a few high-quality ingredients with flavors that meld together beautifully. Authentic guacamole doesn’t contain fillers and unnecessary ingredients. All you need are a few ripe avocados, lime juice, and some herbs and spices that bring it all together.

I am a major MAJOR fan of avocados and Mexican food, so you can imagine how much I adore guacamole. Most meals that I enjoy this guacamole with have tomatoes in them to start with (eg salads, wraps, etc) so I tend not to add tomatoes into my guacamole. I actually love guacamole way more without extra, overpowering ingredients (such as tomatoes & olives) & when kept simple. I like to let the avocado do the talking.

This guacamole recipe is also oil-free! And still tastes incredible. Something I really love about guacamole is how versatile it is. I enjoy it with crackers, inside wraps & burritos, on top of salads, with baked pieces of sweet potato, with zucchini noodles, and even as a quick and simple snack with chopped carrot, capsicum & sugar snap peas.

Pick ripe avocados for the best guacamole

The best guacamole starts with the freshest ingredients. Look for avocados that are ripe, but firm. You definitely don’t want super soft mushy avocados.

So how do you pick good, ripe avocados? First, grab avocados that still have the stem attached. If the stem has been removed in the store, it’s more likely to have brown spots on the inside. Then, gently press on one end. It should be firm, but have some give to it. Making guacamole from avocados that are too firm will make it difficult to mash & mix with the other ingredients, so make sure the ones you pick are slightly soft with some firmness!

 
 

Ingredients

(these quantities will serve 4 people)

  • 4 ripe avocados

  • Juice of half a lime

  • 1/2 tsp flaked sea salt

  • 1/2 tsp black pepper

  • 1/2 tsp red chilli, seed & finely diced

  • 1/4 cup coriander, diced

  • 1/4 cup diced brown onion

 
 

Method

  1. Slice four ripe avocados in half, remove the pit and scoop them into a mixing bowl. Then use a fork to gently mash them to your desired level of chunky or smooth. If you love your guac more on the creamier side, mix for longer and in circular motions.

  2. Add in the lime juice, flaked sea salt, pepper, chilli, coriander, and onion. Stir everything together.

  3. That’s it. The most delicious, easy guacamole.

How to store leftovers & keep your guac green!

Guacamole oxidizes and turns brown pretty quickly. The lime juice helps to slow this process, but it’s inevitable that leftover guacamole will eventually start to brown.

The most common guacamole preservation hack is placing plastic wrap directly on the guacamole to prevent oxidation. And this may work for a day or two. But I’m striving to reduce my plastic consumption and just don’t love this method.

So in my quest to keep my guacamole green I stumbled on this hack â€“ and it’s brilliant.

Here’s how to keep guacamole green:

  • Place your leftover guacamole in a storage container and pat it down firmly with a spoon so it’s nice and flat on top.

  • Add about 1/2 inch of water on top (I used cold water).

  • Place the lid on the storage container and store it in the fridge. That’s it!

  • When you want to enjoy the guacamole, drain the water off the top, give it a stir and you’re good to go.

Note- I rarely ever have to do this because the guacamole is gone in my home before it even gets a chance to go brown hahaha. However, this is the most effective hack I’ve tried and works way better than other common methods like adding extra lemon juice or leaving the avocado seed in the dip. You may think ’water?! .. that’s a little weird’…

But water is a perfect barrier against oxygen, and since guacamole is dense, a little liquid won’t water it down. Pour in a small amount of water to cover the top of the guacamole and refrigerate it for up to three days. After you take it out and pour off the water, stir up the guacamole and the texture will be no different than when it was made. I actually enjoy the taste of guac after it has sat in the fridge overnight; I find all the flavours melt together and are little stronger.
