Raw Vegan Rainbow Summer Salad
This bowl is completely raw and features creamy & spicy jackfruit with crunchy kelp noodles, with a splash of coconut-aminos and cashew cheese, massaged into a variety of colourful vegetables and herbs.

Ingriedents
◦ plain kelp noodles
◦ romaine lettuce
◦ purple cabbage
◦ red capsicum
◦ shallots
◦ purple onion
◦ coriander
◦ plain jackfruit
◦ chilli cashew cheese (does not have to be chilli flavour, but I used it for this)
◦ the juice of 1 lime
◦ pink himalayan salt & pepper
◦ cashews
◦ avocado (optional)
Method
1. In a small bowl, massage the chilli cashew cheese into the jackfruit pieces with lime juice, salt and pepper, and coconut aminos
2. Wash all the vegetables and herbs, chop them up and place them in a large bowl
3. Prepare the kelp noodles by washing them, then add them to the bowl of colourful vegetables and herbs
4. Massage the juice of a lime and coconut aminos into the base of veggies and noodles
4. Add in the marinated jackfruit
5. Top the bowl with a dollop of cashew cheese or avocado, chopped nuts, coriander, salt and pepper and any other spices of your choice
